Vegetable oils produced from the seeds of oil-bearing crops (sunflower, corn, peanuts, mustard, soybean, sesame, etc.) are obtained in two ways:
* pressing, i.e. by squeezing under high pressure from seeds;
* extracting, i.e. by extraction from the seeds with grease solvent.

In some cases combined way is used.

Sunflower oil is obtained from sunflower seeds containing up to 58 % of fat. Sunflower oil is rich with vitamins (A, B, D and E vitamins) and minerals. Refined deodorized sunflower oil is used for direct consumption (cooking), for industrial purposes, in production of different products (lubricants, soap, paints, varnish, etc). In some countries sunflower oil is the most popular oil (e.g. Russia).

Soybean oil is obtained from soybeans containing 14 - 25% of fat. Only refined oil is consumed. Beside direct consumption soybean oil is used in Food industry that is why it is the most widely used edible oil in the world. It is an important ingredient of salad dressings, non-dairy creamers, whipped toppings, breakfast cereals, ice cream, soups, confectionery products, cooking oils, frozen dairy desserts, peanut butter, sandwich spreads and snack foods.

Corn oil is produced from the endosperm of corn kernels containing 48 - 57% of fat. During refining process free fatty acids and phospholipids are removed from crude corn oil, so refined corn oil has one of the qualities consumers value most: its excellent frying quality and resistance to smoking or discoloration. It also has a pleasant taste, resists developing off-flavors. Corn oil is widely used for mayonnaise and margarine manufacturing and direct consumption.
